(ITALIAN NATIONAL SOUP)
( 4-6 PORTIONS)
INGREDIENTS
- LEEKS 400g PAYSANNE
- CELERY 400g PAYSANNE
- CARROT 400g PAYSANNE
- TURNIPS 400g PAYSANNE
- CABBAGE 400g PAYSANNE
- BEANS 400g PAYSANNE
- CHOPPED GARLIC 20g
- B/ ONION 50g
- STOCK 1L
- BUTTER 25g
- BG 1
- GREEN PEAS 50g
- SALT AND PEPPER TO TASTE
- SPAGGATI 25g (1" PIECER)
- TOMATO PUREE 2 tbsp
- TOMATO 100g SKINNED AND DESEEDED
- POTATOES ( CUT INTO PAYSANNE ) 25g
- CHOPPED BECON 20g
- CHOPPED PARSLEY 1 tbsp
- CHOPPED GARLIC 1 CARPEL
METHOD OF PREPARATION
Melt the butter and sauté onion, garlic, vegetable (expect beans tomatoes and potatoes).Then add stock, beans, tomatoes and potatoes, BG, tomato puree and bring to boil. when the mixture start to boil, add (spaggati) and salt, pepper to taste. Finally and previously prepared bacon pellets and cook for 5 minutes. serve with grated parmesan cheese.
