CONSOMME JULIENNE SOUP Ingredients 1. Grinded beef 200g 2. Egg whites 02 3. Brown stock 1l 4. Vegetables (carrot , leeks , onion , celery) 100g 5. Bgs 01 6. Pepper corns 1/2tbs 7. Salt METHOD OF PREPARATION 01 Mix beef , vegetables , egg whites , pepper corns and salt together . then add cold stock bg and bring to boil . when the mixture starts to boil reduces the flame to the minimum and simmers for 04 hrs. . then strain carefully . garnish with juliennes of vegetables (

GAZPACHO COLD SOUP Ingredients 1. cucumber 200g 2. tomato 100g 3. red bell pepper 50g 4. big onion 30g 5. garlic carpel 01 6. green chili capsule 1/2 7. tomato sauce 2tbs 8. Tabaco sauce 1 1/2tbs 9. stock 1l 10. salt to taste METHOD OF PREPARATION Blend all except tomato sauce , Tabaco sauce , salt. then add tomato sauce , Tabaco sauce , salt and garnish with above mixture.
