CONSOMME JULIENNE SOUP
Ingredients
1. Grinded beef 200g
2. Egg whites 02
3. Brown stock 1l
4. Vegetables (carrot , leeks , onion , celery) 100g
5. Bgs 01
6. Pepper corns 1/2tbs
7. Salt
METHOD OF PREPARATION 01
Mix beef , vegetables , egg whites , pepper corns and salt together . then add cold stock bg and bring to boil . when the mixture starts to boil reduces the flame to the minimum and simmers for 04 hrs. . then strain carefully . garnish with juliennes of vegetables (do not mix except in the first step)
METHOD OF PREPARATION 02
You will also need the following utensils two bowls a whisk a spoon a large pot some kitchen paper a cheesecloth and a knife step to whip the egg whites. whip the egg whites until slightly frothy step 1 place the meat and vegetables in a pot take a large pot and add the egg whites the beef chopped onions the onion Brule celery carrot and the tomatoes combine them all together step 2 add the stock add the Colby's stock and mix thoroughly add the herb sachet step 3 bring to a simmering point allow the mixtures to simmer over a moderate heat stirring occasionally stop. staring when the meat begins to float to the surface of the liquid this is called a raft step 4 break a hole create a hole in the center of the raft to allow the consommé to bubble through let it continue to simmer until the full flavor develops this is around thirty minutes to one hour step 5 strain the liquid once the cooking time is up pour the liquid through several layers of cheesecloth step 6 serve adjust the seasoning to taste if necessary garnished with diced carrots and snow peas and serve immediately and there you have a wonderful flavor some beef consommé made.
